Chinese Fried "Rice"

This is today's lunch. Chinese Fried "Rice" with shrimp. It was delicious. Here is the recipe!!
1/2 head raw Cauliflower (grated to make 3 1/2 cups)
3 green onions, chopped and seperated- white and green part
1 Garlic Clove, minced or 1/2 tsp. garlic powder
1/2 tsp Ginger (we didn't have any so we didn't put it in)
3 Tbsp. Soy Sauce
3 eggs, beaten
Olive Oil
Cooked chicken, beef, pork, shrimp, turkey-any mixture of your choice
In a wok or large flat skillet, heat enough oil to cover bottom of pan. Fry minced garlic (or garlic poweder) with finely diced white part of onions for approximately 1 minute. Add grated cauliflower and fry for 4-5 minutes, stirring constantly. Add soy sauce, ginger, diced green onion tops, and pre-cooked cubed meat or baby shrimp. Stir to mix well and brown a bit. Push mixture to one side of pan. Add more oil if necessary and scramble eggs in empty side of pan until done but still moist. Stir eggs into "rice" mix and remove from heat. Stores and re-heats beautifully.
Ok, I used the entire head of cauliflower, and used 1/2 cup of eggbeaters and 3oz of cooked large shrimp (80 calories). I used 1/2 Tbsp olive oil. I have calculated 260 calories for the whole pan (shrimp 80, olive oil 60, soy sauce 60, eggbeaters 60) Cauliflower is such a small amount I'm not counting it, as I don't count most veggies. This is delicious!! Next time I'm adding some frozen peas and carrots!

  2. It was really good. Grating the cauliflower was kind of a pain, but grating cheese is my most despised kitchen task, so that makes sense! :) Hope you like it!
